Healthiest cooking oil? In the kingdom of cooking oils, coconut oil stands head and shoulders above the rest. Period!

Chemically stable saturated fats are the best cooking oils you can use. And of all the saturated fats, nothing is as durable and reliable as coconut oil.

All fats and oils are composed of fatty acids. Each fatty acid has a chain of carbon atoms. Each carbon atom has varying numbers (up to two) of hydrogen atoms attached to it.

A Saturated Fatty Acid (SaFA) has all its carbon atoms holding two (maximum) hydrogen atoms. This type of fatty acid is said to be saturated or "loaded" with hydrogen and is called a saturated fat.

Not lacking any hydrogen atoms means saturated fats are "very stable." They can withstand cooking heat very well so they don't oxidize (rot) nearly as fast as unsaturated fats do.

Unsaturated fats, especially polyunsaturated fats like soybean oil, are structurally weak which means they rot rather quickly. Rotten cooking oils are dangerous because they generate huge amounts of free radicals associated with dozens of degenerative diseases including cancer.
