Virgin coconut oil (VCO) and refined, bleached and deodorized coconut oil (RBD.) While RBD oil has been heated and dried out then refined, the VCO uses little to no heat and no chemical refining. The refined coconut oil is scentless and tasteless, whereas the virgin coconut oil has a fresh coconut aroma and flavor. VCO and RBD coconut oils contain essentially the same health promoting medium chain fatty acids. Both types of oils are considered to be healthy oils.

Coconut oil contains fatty acids that are smaller than that of other fats/oils. Because of this, it can easily penetrate your skin and feed each and every skin cell it reaches. Both MCFAs and their monoglycerides exhibit potent antimicrobial actions. There are very few sources of these health-boosting fat molecules and coconut oil happens to be the richest natural source. Coconut oil is a healthy cooking oil capable of resisting oxidation (spoilage) better than any other cooking oil on the face of the earth. It is made up of 92 percent saturated fatty acids, which makes it extraordinarily protective against heat and free-radical formation. There are different types of fats, but all fats are made of fatty acids. Saturated Fatty Acids (SaFA) are saturated or “full” of hydrogen atoms in their carbon atom chain.Saturated fatty acids are crucial for maximum health. Monounsaturated Fatty Acids (MUFAs) lack a pair of hydrogen atoms while Polyunsaturated Fatty Acids (PUFA) are missing two or more. Monounsaturated and PolyUnsaturated fats don’t have the durable molecular structure inherent to all saturated fats, which makes them very unstable and extremely prone to oxidation. Being durable enough to withstand normal cooking temperatures, saturated fatty acids are what mainly constitute healthy cooking oils. Coconut oil is the most saturated of all fats giving it more health benefits than other oils.

Not only do fats differ in their saturation type, they also vary in their makeup. There are short chain fatty acids, medium chain fatty acids, and long chain fatty acids. SCFAs kill harmful microorganisms and are crucial to the health of your colon. MCFAs are easily broken down and immediately sent to your liver where they are used to produce energy, not body fat.  MCFAs also strengthen your immune system by destroying a multitude of disease-causing organisms such as bacteria, viruses, parasites, fungi, etc. Organic coconut oil is the most generous source of MCFAs, the easy-to-digest fat molecules. SCFAs and MCFAs can easily feed your cells. In contrast, Long Chain Fatty Acids (LCFA) are the fats that make you fat and the fats that clog your artery walls. They are also the type found in most cooking oils used today. Unlike SCFAs and MCFAs, LCFAs require digestive enzymes and bile to digest and break down. In short, long chain fatty acids are common, but far inferior to small and medium chain fatty acids.

While your body needs some fats, there are others that are unhealthy and should be avoided. Trans fat and interesterified fat are generated fat molecules that don’t exist in nature. These manufactured fats were created in an effort to make them more solid and stable. Unlike natural fatty acids, your body is incapable of using these harmful man-made fat molecules. Trans fat has long been known to increase “bad cholesterol” and decrease “good cholesterol” in the body. Research has shown that interesterified fat is even worse. It not only decreases “good cholesterol,” it raises your blood sugar as well as upsets your insulin production. Luckily, we have coconut oil! It accomplishes the good stuff interesterified fat and hydrogenated fats were designed for, but without all the health dangers they both present.

The palm tree coconut (Cocos nucifera Linn) is the only tree that I know of wherein all of its parts are of valuable use to mankind.
