What is saturated fat? What makes it so much healthier than you probably were made to believe? And why is coconut oil, by far, the best saturated fat? Saturated with What?All fats and oils are composed of fatty acids. Each fatty acid has a sequence of carbon atoms with differing numbers of hydrogen atoms bound to them. The maximum number of hydrogen atoms a single carbon atom can carry is two. If each carbon atom in the sequence carries two (maximum) hydrogen atoms, the fatty acid is said to be "saturated." The fatty acid is full or saturated with hydrogen and is labeled a saturated fat.
