Saturated Fatty Acids (SaFA), specifically medium chain fatty acids (MCFA), are the nutrients that give coconut oil its incredible ability to make any human being healthier. Because of SaFAs, coconut oil can withstand normal heating temperatures for safe cooking. Because of saturated MCFAs, coconut oil is able to kill HIV, the virus that gives AIDS, and countless other viruses, bacteria, fungi, parasites, protozoa, etc. SaFA TypesMany people, including doctors, don't know that there is more than one type of saturated fat. Lauric acid for example, the most plentiful fatty acid (50%) in coconut oil is a saturated medium-chain fatty acid. But it behaves very differently from other SaFAs such as palmitic acid, a long-chain fatty acid (LCFA) and the second most plentiful in both lard (24%) and beef fat (29%). Unlike palmitic acid, saturated lauric acid, because it's an MCFA, can wipe out a long list of harmful microorganisms and is primarily used as energy to fuel metabolism. All of coconut oil's MCFAs possess amazing antimicrobial properties and are rarely stored as body fat. Saturated MCFAs are the "driving force" that makes coconut oil stand head and shoulders above other dietary fats and oils. This is key! SaFA BenefitsMedium-chain or long-chain though, SaFAs have many valuable functions in your body's chemistry. Saturated fats:
Coconut oil is 92 percent SaFAs and 67 percent MCFAs. It's nature's most saturated dietary fat and richest source of powerhouse MCFAs, "The Healthiest Fatty Acids on Earth."
