Cold pressed coconut oil means only minimal processing was used in the entire production chain. It is considered good quality coconut oil.
This includes antioxidants and phytosterols which counteract oxidation (spoilage) and excessive free-radical formation. Coconut oil is the most stable dietary fat known to man. At 92 percent saturated, it can stay fresh for at least two years, even without refrigeration. Using mechanical pressure and low temperatures, expeller pressed coconut oil is extracted from fresh coconuts and/or good quality dried whole coconut or copra. Chemicals or additives have no place in its production. Most of the good quality Virgin Coconut Oil (VCO) products in the market today are cold- or expeller-pressed. It's actually the type I buy whenever my wife has no time to make some homemade VCO. Trans Fat-freeUnlike highly processed varieties, minimally processed oils contain no trans fatty acids or trans fats. A mountain of research now shows that trans fats increase your risk of heart disease. Cold-pressed should not be confused with Cold-processed, though I admit the play of words can make me nuts. Cold-processed or Absolutely No Heat (ANH) coconut oil is superior because manufacturers use only fresh coconuts with no heat at all. The reason only a few VCO brands are made without any kind of heat is because it's very labor-intensive. Producers can make a lot more cold-pressed oil than ANH oil in the same amount of time.
