Almost all dietary Fats are mostly, if not entirely, composed of long chain fatty acids (LCFA). Only coconut oil and a few others are predominantly medium chain fatty acids (MCFA). LCFA-oils like soybean oil and corn oil are not easily digested. They need digestive enzymes from the pancreas and bile from the gallbladder to be digested. They are then packaged into little bundles of fat and protein called lipoproteins (chylomicrons). These lipoproteins are funneled into the bloodstream where they circulate throughout your body. As they travel, small particles of fat are released from the lipoproteins into your bloodstream. This IS the source of the fat that stockpiles in our fat cells AND the source of the fat that accumulates in and clogs our artery walls. MCFA-rich coconut oil (two-thirds) is processed very differently! MCFas are so easily digested that they do not require pancreatic digestive enzymes or bile for digestion. Coconut oil bypasses the lipoprotein stage. Coconut oil is quickly absorbed into the portal vein and sent directly to your liver to power metabolism. MCFAs rarely contribute to fat storage.
